The following recipe was taken from the National Mutual Benefit 100th Anniversary Cookbook. The cookbook and recipes represent generations of family favorites and the true diversity of the National Mutual Benefit membership. New recipes will be posted at least twice a month. Enjoy!
Sausage Tortellini Soup
· 1 lb. Italian sausage
· 1 cup chopped onion
· 2 garlic cloves, sliced
· 5 cups beef broth
· ½ cup water
· ½ cup dry red wine
· 1 can diced tomatoes
· 1 cup sliced carrots
· ½ tsp. basil
· ½ tsp oregano leaves
· 1 (8oz) can tomato sauce
· 1½ cups sliced zucchini
· 2 cups cheese tortellini
· 1 Tbsp. parsley
· Grated Parmesan Cheese

Preparation
Brown sausage in 5-quart Dutch oven. Remove and drain, reserving 1 Tbsp. drippings. Sauté onion and garlic in drippings until tender. Add beef broth, water, win, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil. Reduce heat and simmer 30 minutes. Skim fat from soup. Stir in zucchini, tortellini and parsley. Simmer covered for 30-40 minutes. Sprinkle with grated Parmesan cheese. Serve with crusty bread and Ceaser salad. |
