The following recipe is taken from the National Mutual Benefit 100th Anniversary Cookbook.  The cookbook and recipes represent generations of family favorites and the true diversity of the National Mutual Benefit membership.  New Recipes will be posted twice a month.  Enjoy!

NMB Cookbook - 2004-2005

Zucchini Casserole

Ingredients

 · 1-¾ lbs. ground beef
 · 1 onion, sliced & separated into rings
 · 4 cups cut up zucchini
 · 1 (8 oz.) can tomato sauce
 · 1 can tomato soup
 · 1 tsp. salt
 · ½ tsp. pepper
 · ½ tsp. oregeno
 · ½ tsp. garlic powder
 · 1 or 2 large tomatoes, sliced
 · 1 cup (or more) grated mozzarella cheese
 · ½ can Italian seasoned bread crumbs
 

Brown ground beef and drain fat. Add onion and zucchini; cook until barely tender. Add tomato sauce, tomato soup and seasonings. Mix well. Immediately pour mixture into 9"x13" casserole dish. Place tomato slices on top. Sprinkle grated mozzarella cheese and bread crumbs over tomatoes. Bake at 375° for 25 minutes or until brown.
